Top 5 trends in the world of Professional Cooking

I dug deep into the current trends going into the land of all things tasty! Here are some current trends that got me in the kitchen and experimenting.
1. Pork Belly
Pork Belly, usually considered a delicacy in Asian cooking . This boneless piece of meat comes from the pigs mid section. Over the last year, there has been a massive growth in searches for pork belly recipes. This is a personal favourite of mine. This needs to be on your next shopping list if you haven't tried it.
2. Locally Sourced ingredients
One of the biggest trends in the culinary industry is the growing increase in locally-sourced ingredients! Some professional chefs & restaurants are actually growing their own produce in their back gardens or farms nearby. I think this is such an inspiring trend to cook with what is in season.
3. Deconstructed Dishes
This is a technique popularly used by Michelin Chefs, deconstructing classic dishes. However it is now becoming a lot more popular and could expect to see it on any menu. Want to really impress your friends at your next dinner party? Why not try this, instead making a burger, you might make a burger salad.. A bed of lettuce, ketchup croutons, strips of ground beef patties and a bowl made from crispy mozzarella cheese.
4. Filipino Cuisine
Why? Perhaps it's because most of the dishes are gluten-free. Filipino cuisine is a fusion. It's influenced by Chinese, Malaysian, Spanish and American culinary traditions so its flavours can be quite complex but delicious! One of the most popular dishes is adobo. Flavours in Filipino dishes are layered and rely heavily on vegetables and fruits such as Pineapple, coconut & tomatoes.
5.Adult Ice Cream
Who doesn't like ice cream? Recently I have noticed a new trend of complex ice cream flavours where they combine ice cream and alcohol. Here are some of my favourite flavours I have come across. After all, ice cream isn't just for kids!- Burbon Apple Pie
- Malbec Ice Cream
- Pina Colada
- Baileys
